I LOVE s’mores. They have always been a top favorite dessert for me – they are so nostalgic. So these vegan s’mores bars are the perfect summertime treat without the need of a campfire. As an added bonus (if they needed it) these perfect cookie bars whip up so quickly. No stand or hand mixer needed here.

Graham Cracker Cookie Base

The base of this recipe is a graham cracker cookie base which is made of vegan butter, sugar, flour and the most important ingredient: graham cracker crumbs. Now when you’re at the store purchasing graham crackers, all of the ones labeled honey graham crackers will not be vegan. I usually go with these, but here is a full list of vegan graham crackers if you cannot get the nabisco ones near you or order online! To make graham cracker crumbs, I usually throw them in the food processor. If you do not have a food processor, just throw them in a large resealable bag and go to town crushing them up by hand (or with a rolling pin)!

Vegan Marshmallows

You will need vegan mini marshmallows for these vegan s’mores bars. If you cannot find mini marshmallows, you could probably cut up large vegan marshmallows into smaller pieces… though to be honest that doesn’t sound like fun. I love to use these Dandie’s mini marshmallows, as I usually can always find them at the grocery store! 

I have a little nugget of information to share about vegan marshmallows: use older ones! Ones that are older are less prone to ooze out everywhere. I figured this out when creating the recipe for vegan milk bar cornflake marshmallow cookies.

Serving Vegan S’mores Bars

I know it’s tempting to immediately dig in after these vegan s’mores bars come out of the oven. But please wait! They’ll fall apart if you do not give them enough time to cool off and set up. If you want them to cool a bit quicker let them partially cool in the pan, then remove them to a plate or cooling rack to further cool. They will cool a bit quicker as the pan will no longer be insulating the s’mores bars. The best time to eat them is when they are still partially warm. The chocolate and marshmallows will still be gooey!

Ingredients
  • ¾ cup (170g) Unsalted Vegan Butter, Melted & Cooled
  • ½ cup (110g) Light Brown Sugar
  • ⅓ cup (66g) Granulated Sugar
  • ½ tbsp Vanilla Extract
  • 1 cup (106g) Graham Cracker Crumbs (about 8-9 sheets)
  • 1 ¼ cup (160g) All Purpose Flour
  • ½ tsp (3g) Baking Soda
  • ½ tsp (3g) Kosher Salt
  • ⅔ cup (110g) Chopped Semi-Sweet Chocolate (60%)
  • ⅔ cup (70g) Vegan Marshmallows
Method
  1. Preheat the oven to 350°F. Lightly spray an 8"x8" pan with spray oil and line with parchment paper. Set aside.
  2. In a large bowl, add the melted butter, brown sugar and granulated sugar. Whisk together until homogeneous (about 1 minute). Add in the vanilla extract and whisk again until just combined.
  3. Add in the graham cracker crumbs, and whisk together until no dry pockets remain.
  4. Add in the flour, baking soda, and salt. Combine with a rubber spatula until no dry pockets of flour remain.
  5. Fold in your chopped chocolate and vegan marshmallows until evenly dispersed throughout the dough.
  6. Transfer the dough into the prepared pan and flatten into an even layer.
  7. Place in the oven and bake for 35-40 minutes. Remove and let fully cool (about a half hour) before slicing!

    35 minutes was way too long. My whole pan is as hard as a rock after cooking and the marshmallows are over cooked!

      Hi J,
      So sorry this happened – a few people have made them and haven’t had an issue with them baking correctly! Your oven may run a bit too hot which would lead to a dense cookie with overcooked marshmallows. You may have just to adjust the temperature or bake time to compensate!
