I love easy desserts that incorporate seasonal fruit. Cobblers and crisps with fresh fruit, a crispy topping, and obviously served alongside a scoop of ice cream. They are a beautiful thing. You can throw them together quite easily, and they’re great for sharing with friends. You’ll also wow them. This vegan plum rye biscuit cobbler incorporates one of my favorite summer fruits: plums. Added into the plum is a dash of cardamom to bring a warm flavor. To make this somehow even better, it is topped with rye biscuits that have a crunchy sugar coating.
Vegan Burnt Miso Peach Ice Cream
I live in New England, we’re having our first stretch of 50 degree plus days, so obviously, as a new englander, I must eat ice cream now that it is “warm”. This ice cream is created using my tried and true base vegan ice cream recipe. But being who I am, I wanted to experiment with different flavors. At first I didn’t think miso would work in a vegan ice cream recipe, but oh goodness, it is awesome! I took a lot of inspiration from Christina Tosi’s burnt miso pound cake. I love using miso and when I saw her recipe, I had to figure out how to use burnt miso in something. So this vegan burnt miso peach ice cream was born!
Vegan Caramelized Onion, Leek and Pear Galette
I love galettes for dinner. They’re really easy, super versatile and if you have a side salad with it, that’s a complete dinner! You won’t be able to whip this up quickly for dinner, it requires a lot of inactive time, but it is 100% worth it. This vegan caramelized onion, leek and pear galette is a bit savory, with a hit of sweet from the pear and the onions.

Vegan Blood Orange and Maple Cornmeal Upside-Down Cake
This cake, not only is it beautiful, but it is super easy to make! Impress everyone you know with cake, it is a literal work of art. The only time consuming part of making this vegan blood orange and maple cornmeal upside-down cake is cutting and trimming the blood oranges. Vegan Chocolate Ice Cream
This past summer, my fiancé gifted me an ice cream maker, and I’ve been working on the best vegan ice cream recipe ever since. It took a lot of research on the science of ice cream, and a lot of taste testing (it’s tough work, but someone has to do it). There were a lot of failures but I am very happy with this final product. This is my tried and true vegan chocolate ice cream recipe, it puts all store bought vegan ice cream to shame. It even fools non-vegans too, it’s that good!

Another cookie recipe, I know. I’m a cookie fiend, but I can’t help it. Last Christmas, my fiancé gave me Milk Bar’s cookbook. Milk Bar has very unique recipes that I have always found inspiration in. But when searching online to find veganized versions of these recipes, not much has turned up.
