To say I have an obsession with kimchi may be an understatement. I eat so much of it. I’ve always wanted to make a kimchi based baked good for here, but could never decide on it. Until one day I made this from items in my fridge, and it’s so GOOD! These mini vegan broccoli kimchi galettes have the best flavor combination. Vegan cream cheese for some creamy goodness, broccoli for some texture and flavor, kimchi for some tang, and black pepper buttery crust to just send these over the top.
Vegan Blueberry Corn Cookie Bars
This dessert screams summer. Have you ever had corn and blueberries together? If not, I highly recommend you try these bars! They are super simple to make and are also really unique. These vegan blueberry corn cookie bars are a spin on a corn cookie, but are closer to a shortbread in texture. Very addicting and borderline a savory treat. This was a tough one to crack – for some reason vegan brownies are not very straightforward! This is my most tested recipe that I have been working out on and off for months. I wanted to create a recipe that didn’t use black beans, flax, bananas, apple sauce, tofu, or any other ingredients typically seen in most vegan brownie recipes. It was really important to me that this was accessible and the taste was amazing – you can not tell the difference between these and non-vegan versions. Typical vegan brownies are too dry, oily, crumbly, the list goes on. These are super gooey, so if you are in the market for something more cakey, I would look elsewhere.

This recipe is the grown up version of my childhood favorite, toaster strudels. When I liked a food, my parents would just buy it in bulk as I would eat it everyday. So I had a lot of toaster strudels growing up. Strawberry was my favorite flavor! So this recipe for vegan strawberry toaster strudel really hits the spot for me. It is a grown up, more sophisticated version. These have a homemade roasted strawberry jam, with vegan rough puff pastry. They are buttery, flaky and just the right amount of sweet with the jam. Some of my fondest memories include donuts. I remember going camping with my parents and picking up donuts in the morning for breakfast. But before the pandemic, this local donut shop did a hot donut window in the summer. They serve fresh out of the fryer donuts from their window, and have the best brioche donuts. This is where I hung out with my best friend and her husband for the first time. So basically, donuts and I have created a lot of good memories.
