Mayonnaise, in Banana Bread?

Don’t knock it till you try it! I know, you’re thinking it sounds nasty to use vegan mayonnaise in a sweet baked good, but hear me out! If you don’t know, there are a ton of chocolate cake recipes out there that actually use mayonnaise instead of butter or oil. Which if you think about it, makes a ton of sense! A typical non-vegan mayonnaise, is made of a few ingredients – eggs and oil being the main ones. Do you see where I am going with this?

So obviously vegan mayonnaise does not include eggs, but it includes stabilizers, which helps keeps this vegan banana bread stable and super moist! And the vegan mayonnaise is adding some fat to this banana bread to make it more tender. I swear, you won’t even know there is vegan mayonnaise in this! 

I know this question will be asked – “Can I use reduced-fat vegan mayonnaise instead?”. Which the answer I am not sure of, I haven’t tested it out. I have looked at various cake recipes, using mayonnaise and they all say the same thing about using a reduced-fat mayonnaise, it will result in a denser texture. So if you’re okay with this, try it!

Additional Notes

If you’re wondering if you can add chocolate chips or walnuts, I say go for it! My personal preference is plain banana bread – but this would be really good with both or one of those additions! 

The sugar in this vegan banana bread plays a big role in the moist texture of this bread. Adjusting it will likely change the banana bread. While developing this recipe, I had a version with less sugar. Trust me. It needs all of the sugar!

The riper your bananas are, the better! As bananas ripen further, it gets easier to mash them and the natural sugars are really enhanced. It makes for a better banana bread. You will also see I added a grams measurement for the bananas. Since bananas can vary so much in size, I included it so you can get the perfect amount! It is okay to be shy or over a little the weight of your bananas, the vegan banana bread will turn out great still.

Ingredients
  • 2 cups (260g) All Purpose Flour
  • 2 tsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Kosher Salt
  • 3 (350g) Ripe Bananas
  • ¾ cup (165g) Brown Sugar
  • ⅓ cup (75g) Vegan Mayonnaise
  • ¼ cup plus 2 tbsp (84g) Oat Milk or Any Other Non-Dairy Milk
  • 1 tsp Vanilla Extract
Method
  1. Pre-heat the oven to 350°. Spray a 8” x 4.5” loaf pan with spray oil, and line with a parchment paper sling to help remove the banana bread easily later on.
  2. In a medium bowl, sift the flour, baking powder, baking soda and salt. Whisk to combine.
  3. In a large bowl, add the bananas and mash with the back of a fork until no large clumps remain. 
  4. Add in the brown sugar, vegan mayonnaise, oat milk and vanilla extract to the bananas. Whisk together until completely homogenous. 
  5. Add the flour into the banana mixture and whisk to combine until mostly all the lumps are gone. Be careful not to over mix.
  6. Pour your batter into the loaf pan and place in the oven to bake for 60-70 minutes until the top has a golden brown color on the top and a cake tester comes out clean.
  7. Let cool slightly for around 15 minutes, then using the parchment sling, take the banana bread out and place on a cooling rack to let completely cool.
