Sometimes you just need a cookie. And this recipe is perfect for this occasion! These easy vegan chocolate chip cookies live up to their name – they are EASY. This recipe requires no chill time, and no hand mixers, but still creates amazing vegan chocolate chip cookies. You can also make it in 1 bowl – which is an added bonus!

Perfect Vegan Chocolate Chip Cookies

This recipe will be your NEW go to recipe for easy vegan chocolate chip cookies. They turn out perfect every time. They are rich in flavor, with crispy edges, and a gooey interior. If you are looking for a bit of an elevated chocolate chip cookie, I would check out my other vegan chocolate chip cookie recipe. The chill time is quite long, and has a secret ingredient. 


To get the perfect chocolate chip cookies, there are a few things you should know. The first would be to measure your flour properly. I’ve found that in this recipe development that a small variation in flour can make or break your easy vegan chocolate chip cookies. I made versions with just slightly less and more flour (matter of tablespoons). Going with less flour results in a flatter cookie, and just a little more flour results in cakey cookies. So to properly measure your flour, use a scale! If you don’t have a scale and refuse to buy one (which you should – it results in perfect baked goods, every single time), scoop your flour into your measuring cup instead of scooping directly from the flour container. This results in a more accurate measurement of flour.

Bigger Cookies are Better

And this is just a fact – who doesn’t love big cookies? Larger cookies bake better than smaller cookies anyway. The bigger cookies tend to stay gooier and have those crispy edges that everyone is looking for! With a smaller cookie, the center sets a bit quicker which inhibits you from achieving a cookie that has a soft and gooey texture with crispy edges. For these easy vegan chocolate chip cookies I like to use 2 ¾ oz scoop, or an ice cream scoop.

Ingredients
  • ½ cup (113g) Unsalted Vegan Butter, Melted
  • ⅔ cup (146g) Brown Sugar
  • ⅓ cup (66g) Granulated Sugar
  • 3 tbsp (44g) Oat Milk or Any Other Non-Dairy Milk
  • 2 tsp Vanilla Extract
  • 1 ½ cup + 2 tbsp (260g) All-Purpose Flour
  • ½ tbsp (5g) Cornstarch
  • ¾ tsp Baking Soda
  • ¼ tsp Baking Powder
  • ½ tsp Kosher Salt
  • 1 ½ cups (240g) Vegan Chocolate Chips
Method
  1. Preheat your oven to 350°F.
  2. In a large bowl, add the melted butter, brown sugar, and granulated sugar. Whisk well until sugar is homogenous with the butter into a paste like consistency.
  3. Add in the vanilla extract, whisk until combined. Then add in the oat milk, and whisk until combined.
  4. Add in the flour, cornstarch, baking soda, baking powder, and salt. Switch to a rubber spatula and combine until no large pockets of flour remain (a few streaks of flour are fine).
  5. Add in the chocolate chips, and fold into the dough until evenly dispersed.
  6. Scoop the dough out with an ice cream disher (approximately 2 ¾ ounces per scoop) onto a baking sheet lined with parchment paper.
  7. Bake in the oven for 14-16 minutes until lightly brown around the edges, and puffed up and pale in the center. Remove from the oven and top with flaky sea salt and more chocolate chips. Let cool on the baking sheet for 10 minutes to set up. After you can remove the cookies to further cool on a cooling rack.
